Except that I erased the .kde config, to start fresh and it did not improve the situation. I also specified 800 x 600 as window size, but x2go resizes the window without me asking to do so to full display size and it is still not enough to display everything, the task bar for example (kde) is off screen.

Which version of which operating system? In the newer Linux's, Fedora 24,
Ubuntu 16.04, and now Mate 18, there is an issue with the version of xrandr.
You can manually set by calling it from a terminal:
xrandr -s (width)x(height)

This is a Debian 8 (Jessie). The issue has popped up right after upgrading Debian 7 to 8.

I would like to look at my Debian to see what version it is, I do not
currently have a screen resizing. The problem is another server, Mint, I have x2go broken but it's currently up, if the connection gets torn down before it gets fixed I can't get it back up, and a bug in x2go client causes it sometimes to tear down connections to another server when I set one up.

xrandr -s (width)x(height) works if I call it in a terminal, it resizes the Window. But I cannot make the window bigger after that, and making it smaller does not make the content smaller. It seems that whatever used to call this xrandr dynamically when I resize the window, stopped doing that. I wonder what broken, this is a fresh install (wiped all the preexisting configs) of all the x2go components on an existing system and on Debian 7 that I had before the upgrade it was working for years without a flaw. Are there any log files that the x2go server component puts out that I can take a look at?

I'm curious: Does x2goserver work for anyone on Ubuntu 16.04 or Debian 8 with dynamic screen resizing? Or is this just my configuration, where I upgraded from Debian 7? I'm using x2goclient on Debian 8 and that works like a charm.

Yes but on Ubuntu 16.04 it is necessary to use the nxlibs from
arctica-project.org repo and the nightly builds of x2go as the older versions have xrandr 1.2 and Ubuntu 16.04 requires at least 1.3.
