sshfs works both ways, you can mount directories from your server on your
local machine or vise versa and that can be installed with ssh without x2go. It is a very convenient feature, a lot easier than screwing with nfs or samba if just for a single user.

sshfs is used for client-side printing from within X2Go sessions and for mounting local folders and/or devices into the X2Go session.
If you don't need those features, it is ok to uninstall sshfs.
