I thought of Sabayon to edit users' profiles and allowed the execution of applications by groups (as I didn't find a tool for that).
Concerning the assistance by taking control of user session, I read a comment of Heinz to use x11vnc server. Do you use this module ?

You cannot do that with X2go so far I know.

Maybe the menu-editor has functions to hide some applications for groups of users.
For so far I know there was made something to change the menu per-group for the city of Haren in the Netherlands. I can bring you in contact with the people who did it.
