if I open the settings and remove the checkbox on "keep current keyboard settings" and use the filled in ones (de, pc105/de) it works. If I set the checkbox again i've an english layout again.
It's correct. "keep current keyboard settings" mean "do not explicit set keyboard layout using xkbmodmap"
if you unchecked this option, x2goagent will set by every connection specified layout (in your case pc105/de).
